Tacos and Vegetarian Fajitas

Tacos

INGREDIENTS

2 TBS. olive oil

1/2 cup of diced red onion

1/2 poblano or jalapeno pepper if you want it spicier

1 can black beans drained and rinsed

1/4 tsp paprika

1/4 tsp coriander

1/2 tsp cumin

1/4 – 1/2 tsp. chili pepper

juice of 1/2 to 1 lime (optional)

1/3 cup of salsa

hard shell tacos or soft tacos (your preference)

Toppings:

1 avocado

frozen corn that’s been cooked

1 red, yellow or orange bell pepper diced

shredded cheddar cheese

2 or 3 scallions cut small

sour cream

diced tomatoes

INSTRUCTIONS

  1.  Heat olive oil over medium heat

2.  Add diced red onion and cook until soft

3.  Add poblano or jalapeño pepper along with spices -paprika, coriander, cumin, chili pepper and cook stirring about 1 – 2 minutes

4. Add salsa and lime (optional)

5. Add drained and rinsed black beans

6.Salt and pepper to taste

7.  Remove from heat and partially fill taco shells with mixture

8.  Add favorite toppings –  avocado, corn, bell pepper, cheddar cheese, scallions sour cream, diced tomatoes

Vegetarian Fajitas

INGREDIENTS

2 TBS. olive oil

Pick 3 bell peppers, preferably different colors

1 red onion cut into lengthwise wedges about 1/2 inch

2 sliced large portobello mushrooms

2 garlic cloves minced

1/2 tsp chili pepper

1/2 tsp smoked paprika

1/2 tsp cumin

pinch cayenne

salt and pepper to taste

1 can pinto beans drained and rinsed

Flour or corn tortillas

Toppings:

guacamole or cut up avocado

sour cream

shredded cheddar cheese

cilantro (optional

INSTRUCTIONS:

  1.  Heat olive oil over med to high heat in a skillet, preferably cast iron, but not necessary

2.  Add sliced peppers, red onion and mushrooms and saute until soft but not soggy.  About 5 minutes stirring frequently

3.  Add minced garlic and stir until fragrant.  About 1 minute.

4.  Add chili pepper, smoked paprika, cumin and cayenne, cook 30 sec. to 1 minute stirring constantly

5.  Place above into a serving dish

6.  Add pinto beans to pan and warm through

7.   Add vegetable mixture and beans to the tortillas and serve with toppings: guacamole or avocado, sour cream, cheddar cheese,                          cilantro
